Recipe Please

Does anybody know how to make blinis and if so is it easy? I am taking the starter to a NYE supper tomorrow and smoked salmon and blinis suits everybody but guess what I can't find any.

Going to try your recipe Yoyo as it is the most straightforward. Hope it works (if not have a loaf on standby) because in a rather well known supermarket yesterday they were very expensive. Enough for 10 of us was going to come to about £10.

Thanks Yoyo, that was a breeze. Ok, so they don't look as regular as shop bought ones but they taste great apparently and are a lot less rubbery than commercial ones.

Never had blinis, but the recipe looks awfully like that for dutch poffertjes - a very small pancake, quite puffy, that's cooked in a pan with little dips in it (or in a traditional poffertjes kram cafe, they have a huge oblong cooker covered in dips, so they can cook many portions at the same time). Normally served with a lump of butter & icing sugar. And often a sweetened alcohol sprinkled over the top - Cointreau or the like. Heel leker!

There's a poffertjes kram on the square outside the station in Utrecht, with little private compartments round the edge to eat them in private, and I seem to remember a cat wandering around last time I was there. Also a good one in the Openlucht (open air) Museum at Arnhem, using an oldfashioned flour mix of buckwheat, rye and wheat flours.

Mmmm. I think I know what we're having for pudding tonight, with home made ice-cream.
