This certainly isn't of GBBO standard but for the cake bakers amongst us this is very tasty if a little ..... rustic :? Our apple tree is groaning and the recent rain brought down some decent sized fallers.

Line a small (1lb loaf tin) or similar.

Make a small Victoria sponge batter (2 eggs, 112g flour, 112g butter) adding 1tsp cinnamon and 1/2tsp baking powder. Peel and chop 2 small cooking apples and add to batter. Put in tin and sprinkle top with Demerara sugar. Bake 180 degrees for about 1/2 hour.

Delicious.

Nice recipe Doodles. I think we'll have a good year for apples.
