Great advice! Thought I had posted a reply in between, but somehow got lost...
I think the problem is that he enjoys a lot of subjects and is very good across the board. Choosing A levels will be even harder - actually think an IB would really suit him.
He does enjoy languages - he is learning his third foreign language voluntarily two afternoons after school; but agree it narrows down other options. Music would work - he plays three instruments (grade 3-6) and takes part in lots of bands/ orchestras. Economics caught his eye and I thought it may be good to try something new; although he is under the impression it will be quite work-intensive. Agree regarding History as a wider choice. Good point about DT and engineering!

University IB offers are much higher than A level equivalents so beware.

DS' school all take a gcse language in yr 9 and then AS in yr 11. DS and many of his peers got A* at gcse. Not sure about AS results but I think there were plenty of As. I think they were certificated in yr 11.
