Some schools make it compulsory to pick at least one of the humanities subject. This is the case with both of our boys' schools

There is absolutely NO legal requirement whatsoever to take any Humanity - that is a school policy which should be challenged. It used to be compulsory to take a Technology subject to GCSE - that disappeared in the early 2000s - no wonder there is a shortage of Engineers.

On that note, is there a legal requirement to take any of the GCSE subjects? Can a student pick humanities, MFL over Maths/Sciences as an example.

My son is at HGS and he is doing 12 GCSEs.

If all independent schools are coming down to 9 GCSEs are the kids in grammars at a disadvantage because of 11-12 and 13 GCSEs especially as this leads to very little time to do any extracurricular activities which universities value and look out for in potential applicants as they are looking for well rounded graduates

SCGSG do 10. English Lang/Lit, Maths, 3 sciences, a language and then 3 choices.
Up until recently they also did RS in year 10 to make a total of 11, but this has changed with the new spec for RS. They now can't do it in the time so its been dropped.
