Have you looked at the Level Up series?

Is that what you use?

I'm after something that when the parent can't explain to the child then is a good ref to use?

I was suggested to use STP MATHS but I don't think they explain the basics well

STP is very old fashioned and does not fit the new (five years old) KS3 curriculum.

Look at Oxford or Collins - what does the school use?

Have you looked at the Usborne Illustrated Dictionary of Maths? It is excellent, gives very clear examples and has internet links.

There is also a Junior version, but the full version would be better to lead into KS3.

I definitely would recommend it
