my DS uses different methods for multiplication, divisions - what is te best way to teach methods - / checking his methods?

The best people to ask are the school. What methods are they using? It will vary depending on what year group he us in.
You could also look up the National Curriculum, which will give you some idea of what is expected. If you teach a different method it can be very confusing.

The school should have a Numeracy policy but it's important that they choose appropriate methods they are confident to use accurately. Why don't you ask him about what method he's using and why?

I’m no expert but if the answers are consistently correct this shouldn’t be an issue for 11+ imo. In our area speed is key so while DS knows how to the official school long hand methods, we’re learning the mental maths shortcuts to get speed up.
Obviously you’re absolutely right to focus on basics first if accuracy is your concern at the moment. Good luck
