Put the bowl in a sink full of cold water.

Sally-Anen doesn't actually mean that :shock:

What she meant to say was fill the sink with cold water to a level BELOW the top of your bowl, this will help firm up the ganache :lol: :lol:

Ok so plain chocolate rum truffles are to die for. Milk and white chocolate ganache still not thinckening up. Have read somewhere that I should add more chocolate to these two as the chocolate has high cream content. Should I wait as the recipe doesn't mention it?

mixed spice all spice, aargh, have horrid sinking feeling about christmas cake!
mixture WILL thicken, given time. honest.

Tipsy it will thicken but it will take longer 'cos it has milk/cream in it. Try shoving it in the freezer - presuming you have room - but not for long or it will go grainy.
