Evolution Climbing just outside of Groombridge runs holiday courses at their premises in Lye Green, and also at Harrison's Rocks in Groombridge. http://www.evolutionindoorclimbing.co.uk/ is the website. (hope that's okay to put website)

The Bowles centre just outside crowborough also do day courses in climbing and Kayaking.

This is similar to the approach at DS's school - the A & B teams go off to do their training and the rest are taught at their own level or have inter-form competitions in soft-ball or basketball or somesuch. Seems to work quite well.
