I have just come in from the garden
..having picked 2.5 lbs ( just over a kilo) of tomatoes and a very large marrow..all suggestions gratefully received as this week I are mostly eating..guess what!
with apples and pears for pudding.
got to head back out and pick the chard and potatoes next

I love marrow, and if we've got any have a few slices with my roast dinner, however, as nobody else eats it there's awlays loads left!
So, here are my main uses this summer:
Chop it into cubes & throw in casseroles, bolognaises etc & tell them its carrot or potato or anything & they don't notice!
I once sliced rings about 1-2 inches, hollowed out the seeds & stuffed with any sort of meat mixtue & topped with cheese. They did eat this but not all the marrow part!
Kids favourite - marrow cake. Yum. You don't even have to peel the marrow just grate it in.
Tomatoes I would be tempted to skin, cook up with a bit of seasoning & freeze in batches as sauce bases.
I did make an apple & pear chutney a couple of weeks ago to use up the fruit, the recipe was in the Morrisons magazine.

how do you cook the slices with your roast? I sometimes cook mine in cubes with onion , butter with plenty of seasoning, but a change will be nice!
I like it cubed and layered with sliced onion, tomato and seasoning dotted every so often with butter and teh n cooked tightly covered in a lowish oven for about 3 hours, breadcrumbs and cheese on top fpr last 20 mins and heat turned up.
I like the idea of the tomatoes frozen as a sauce for later in the year , they are really sweet and juicy ( still more to come!0

yoyo, do you do stuffed marrow? My mum used to do this, with a herby tomato and mince filling topped with breadcrumbs and grated cheese. It was delicious.

In desperation one year I made marrow jam! Yuk! I wouldn't recommend it!
Spiced marrow soup is nice though.

I have marrow baked with onions to go with the chicken today,
oven baked ratatouille with lamb steaks on Tuesday
and marrow and roasted garlic soup ( garlic also from garden, seemed a good idea to plant 39 plants at the time).
that's one down 3 more to go!!

In the late seventies when wine making was all the rage my parents used to make marrow wine. It was very nice (at least to a teenager ).
