How many sit 11+ tests in diff regions each year?
Does anyone have any idea how many candidates sit 11+ tests for Grammar schools in different regions?
I know approx 4600 in Birmingham and 11,500 in Kent took 11+ tests last year.
What about other regions?

About 1700 in Warwickshire.

3987 DCs sat for the Essex CSSE 11+ exam for 2013 entry.

There will be multiple counting of some candidates who sit the test in more than one area / school.

Any idea how many sit 11+ nationwide?
Just want to research how varied/different is the competition from region to region, and whether 11+ is more competitive than admission into medical school later on etc.

Different regions have different systems so it is very hard to compare. Do you mean how many apply for each place? In Buckinghamshire we have an "opt out" system (Kent too, I think?) where everyone within the county is entered for the exam unless they request otherwise. Approximately 30% get grammar school places, which is very different to super-selectives where pupils (often from a very wide area) opt to take the test, but only a small percentage are offered a place.

How do you compare competitiveness? If you did it by doing something or other with the statistics and then showed that they showed that passing the 11plus was more competitive than entering medical school (e.g. by looking at applicants versus admissions for a superselective grammar) then this would be misleading as it would give the false impression that if you could pass the 11plus you could well be a dead cert for med school. This is clearly not the case.
Why are journalists so interested in the 11plus and tutoring at the moment? There was even a BBC radio 4 drivetime comedy last week about hothousing. It confused my DH who thought it was a current affairs phone in. Don't think he would have passed.

In Kent, you have to opt in, ie, apply to take the 11+, you are not automatically entered.

Yes, and in some places it's opt out. So the figures are not comparable.
A much more interesting article would be to celebrate the schools that are making satisfactory progress with a huge proportion of high attainers (those who attained level 5s at KS2) and medium attainers (those who attained level 4 at KS2) --- in order to do this see the much more informative school performance tables that are on the DfE website for 2012 KS4 results.
You can see from tables like this why parents are right to be careful about which school to send their child to. In the past they were guessing - now they have some better information than before.
e.g. compare Bennett Memorial in Tunbridge Wells (non-selective outstanding) with Hillview in Tonbridge (non-selective OFSTED outstanding) and Knole Academy, Sevenoaks (non-selective) to see how the new tables might help people round here in an 11plus authority to choose a secondary if their daughter had not passed an 11plus exam in Kent, or had decided not to take it.
Not many parents seem aware of these new tables.
